Tomato - Carrot Soup
Cold weather always asks for a bowl of soup and here comes a simple and comforting soup for the chilly evenings.
Ingredients
3/4 lb tomatoes
1 medium sized carrot
Half of a small sized Onion(Yellow/Red)- I used Yellow :)
3 garlic pods(peeled)
1 1/4 to 1 1/2 cups Milk(I used 2% reduced fat)
1 tsp All Purpose flour(Maida)
2 tsp Butter
1/4 tsp White Sugar.
ground black pepper(as per taste)
Salt
Method
1.Microwave tomatoes for three minutes.De skin and make a puree.
2.Pressure cook carrot,onion and garlic pods together,adding enough water.Once done,Make a puree and strain it using a strainer.
3.Heat a pan,add butter,add the all purpose flour and saute for a minute.Now add the milk and bring to a boil at medium flame.
4.Now add the tomato and the other veggie puree,pepper,salt and let it stand for 2 more minutes.
5.Add sugar just before switching off the flame.
6.Serve it hot with seasoned croutons.
